Ugwu Soup (Fluted pumpkin leaves soup) with sausage like garri pon d beatsπŸ’ƒπŸ’ƒπŸ’ƒπŸ’ƒπŸ’ƒπŸ’ƒπŸ’ƒπŸ’ƒ
On a fine Sunday afternoon aunty ugwu was on her way back from church,when she saw aunty yellow garri on the road,they exchanged pleasantries then aunty ugwu told her that aunties esam,pepper,palmoil,salt,assorted meat ,ofo were all waiting in Nengi’s Kitchen to try a new recipe, aunty yellow garri yelled at aunty Ugwu that she’s always a challenge in the kitchen, it’s either she would be too tough or not as sweet as others, aunty Ugu now gave out the secret, ssshhhhhh it’s a lot of crayfish and white onions 😁😁😁😁😁😁😁😁😁😁😁😁,enough of stories now,let’s cook!
Ugwu leaves – A bunch

Yellow Pepper -(Nsukka Pepper)3

Scotch bonnet -4

Crayfish- 2 cups

White onions -3 Bulbs

Seasoning of choice

Palmoil 3 Cooking spoons

Periwinkle (Esam)- 1 cup

Ofo – (Thickener)2 cooking spoons

Assorted meat- As available

Dried fish -2

Ponmo- 2

Stockfish- 1 largeΒ  chunk

Some salt

3 cups of water


Prepare all ingredients,blend peppers and onions,blend crayfish,slice one onion

Step 1
Wash meat and stock fish add some salt,seasoning and one onion,do not add water,allow it boil,after the meat releases its water ,add 1 cup of water ,add the dried fish,let everything boil,when a bit tender,remove the dried fish and continue boiling the meat and stock fish,if need be please addΒ  a little water boil till tender or to your desired texture,ensure you have some stock left in the pot.

Step 2

Add blended pepper,onions to the stock,let it boil for 4 minutes, add palm oil, crayfish and seasoning, add some salt, let it boil for a fewΒ  minutes.

Step 3

Mix ofo (Thickener)gently in some water,add into the soup, let it boil for 5 minutes, stir it so it doesn’t get burnt cos of the ofo, keep stirring, taste for salt, add some water if it’s too thick, add the ugwu leaves,let it boil a bit cos ugwu is usually tough, then finally add some more crayfish and some sliced onion that isΒ  if you like your onion crunchy if not please add it earlier so it can cook, let it simmer for 5 seconds, your soup is ready😁😁😁😁😁😁
